Barley, Asparagus, Broccoli Salad
3/4 cup cooked whole hulless barley
1 large bunch broccoli, cut into flowerettes, peel and chunk stems
3/4 cup raisins or craisins
1/2 cup thinly sliced red onion
10 strips bacon, fired crisp and crumbled
1 cup roasted sunflower seeds
1/4 cup sugar
Heaping 1/3 cup Smart Balance Mayo
Heaping 1/3 cup plain yogurt
2 Tbsp. white vinegar
1. Cook barley 50-60 minutes in 3 cups boiling water. Drain, rinse, and chill.
2. Combine all other ingredients and prepare dressing.
3. Toss and chill all together. Delicious!
