Italian Barley Salad
3/4 cup cooked whole hulless barley
1/2 cup chopped water chest nuts
1 cup chopped celery
1/4 cup diced onion
1/2 cup chopped red pepper
1/2 cup cubed ham
small can sliced olives
small jar pimentos
1 package dry Italian salad dressing
1/4 cup sugar
1/4 cup salad oil or olive oil
1. Mix together cooked barley, water chestnuts, celery, red pepper, pimentos, onion, cubed ham, sliced olives, and pimentos.
2. Add dressing mix, stir well, and chill for 30 minutes before serving.
