Cooking Whole Hulled or Hulless Barley
Many of these recipes call for cooked whole barley. Be sure to pick up or order Alaska Flour Company hulless barley, since pearl barley is stripped of the two outer hulls and the bran layer, and therefore doesn't offer you much nutritionally.
To cook hulled barley, just take 1 cup of dry grain and add it to 3 cups of water. Cover and bring to a boil. Then lower the heat and simmer for 45 minutes to an hour. Add cooked barley to soups, stews, or sauces to give them a thicker consistency and chewy texture. In your favorite recipes, substitute it for rice, pasta, or mashed potatoes.
OR Use A Rice Cooker To Cook Whole Barley
This method lets you add water and barley and step away from the process until it's done! Add 3 cups of water to every 1 cup of Alaska Flour Company whole hulless barley. Turn rice cooker on and wait until done.
*Cooked whole barley lasts one week in the fridge and 6 months in the freezer. To really get a headstart, make a big batch and freeze it in small portions, so you can quickly defrost it and add it to any soup or salad in an instant!
