CHICKEN & ONION COUSCOUS

A simple weeknight meal you can customize to your family.  

YIELDS: 4 servings

INGREDIENTS

​

  • 1 cup AFC barley couscous

  • 2  1/4 cups water

  • 2 tsp bouillon

  • 1 chicken breast, cubed

  • 1 Tbsp olive oil

  • 1/2 cup onions, chopped

  • salt and pepper to taste

DIRECTIONS

​

  1. Cook couscous following directions on the package, adding 2 tsp bouillon. 

  2. ​Cube chicken breast, fry in olive oil for 2 minutes. 

  3. Add chopped onions to chicken, continue cooking till chicken is no longer pink. 

  4. ​Stir continuously so onions don't burn. 

  5. Mix into cooked couscous, salt, and pepper to taste. 

  6. Enjoy!
