CORDON BLEU BARLEY SOUP

A classic dish turned into a yummy soup!

YIELDS: 8-10 servings

INGREDIENTS

  • 1 cup Alaska Flour Company Barley Couscous, cooked

  • 2 Tbsp butter

  • 2 Tbsp olive oil

  • 1 small head of cauliflower, chopped

  • 1 medium onion, chopped

  • 1 garlic clove, minced

  • 4 Tbsp Alaska Flour Company Barley Flour

  • 3 cups chicken broth

  • 2 cups shredded chicken, cooked

  • 3 cups half-and-half

  • 1 cup ham, cooked, and finely cubed

  • 2 tsp mustard

  • 1 tsp salt

  • 1/2 tsp pepper

  • 2 cups shredded swiss cheese

DIRECTIONS

  1. In a large saucepan, heat butter and olive oil on low heat. 

  2. Add cauliflower, onions, and garlic. Cook and stir for 5 minutes.

  3. Stir in Barley Flour until blended. 

  4. Gradually whisk in the chicken broth. Let simmer for a few minutes till the cauliflower is tender. 

  5. Stir in chicken, half-and-half, ham, mustard, salt, and pepper. Heat through and stir in Swiss cheese until melted. 

TIP

  • If the soup becomes too thick, add more half-and-half or more chicken broth till desired consistency
