FRIED COUSCOUS

Your favorite Asian side dish with a barley twist!
YIELDS: 6-8 servings
INGREDIENTS

1 1/2-2 cups chopped ham

1 small white onion, chopped

1 bell pepper, chopped

1 Tbsp oil
-
3 eggs, lightly beaten
-
3 cups cooked barley couscous
-
1 cup pineapple tidbits
-
1 Tbsp sesame oil
-
2-3 Tbsp soy sauce
-
2 Tbsp chopped green onions for toppings
DIRECTIONS

Preheat a large skillet or wok to medium heat. Add oil, ham, onion, and bell pepper and fry until tender.

Move the vegetable and meat mixture to one side of the pan, and cook the eggs until scrambled.

Mix together the eggs, vegetables, and meat.

Add the barley couscous and pineapple to the egg, vegetable, and meat mixture.

Pour the soy sauce and sesame oil on top.

Fry everything together until heated through.

Top with green onions.
