BARLEY COUSCOUS TACO MEAT

Bulk up your regular taco meat with the hardy addition of AFC barley couscous!

YIELDS: 5-6 servings

INGREDIENTS

  • 1lb. ground beef or turkey
  • 1 large onion, chopped
  • 1 1/2 packets of taco seasoning (or 5 Tbsp)*
  • 3/4 cup water (plus 1 cup for the couscous)
  • 1/2 cup of AFC barley couscous
  • 1 can black beans, drained and rinsed

DIRECTIONS

  1. In a large saucepan, cook up ground beef/turkey until browned. Drain fat.
  2. Throw in chopped onions and cook until translucent.  
  3. Add taco seasoning and water. Cook until bubbly and thick. 
  4. Enter AFC barley couscous! Add the extra water, mix it all together, and bring to a boil. Turn it down to a simmer, cover with a lid, and cook for 8-10 minutes. 
  5. Fluff up, stir in black beans. Enjoy with taco shells or a taco salad!

TIPS

*This may seem like a lot of taco seasoning but remember you are seasoning the couscous too. 

​You can totally use leftover couscous in this recipe! Just don't add the extra water.
